Coconut
I’m an absolute coconut addict… and I have yet to meet someone who loves coconut as much as I do (if you’re a coconut fan, let’s get together sometime and eat!).
I cook with coconut oil, put coconut syrup on my pancakes, make coconut waffles, put coconut milk in just about anything that asks for milk, and get a coconut cake every year for my birthday.
I’ll update this page as I go with some of my favorite coconut recipes - enjoy! (And if you make anything that ships well… you know my address… hint, hint…)
Crisp Coconut Waffles
(adopted from The Good Fat Cookbook, by Fran McCullough)
1 egg
1½ cups coconut milk
2 T butter
1 t vanilla
½ cup flour
½ cup unsweetened, shredded dried coconut
1 t baking powder
pinch of salt
touch of honey (if you want)
First mix all the wet ingredients together, then the dry. And cook ‘em up in your waffle iron - yum!

If you know coconut, then you know Thai Kitchen makes the best coconut milk imaginable…
And on their website, they have a section devoted to desserts. Oh yeah.
One recipe I saw on there was for “haupia”, which is a staple in the Hawaiian islands, using arrowroot instead of cornstarch. I’m eager to try it (I haven’t yet, because I’m the only one in my family who likes haupia
), because cornstarch tends to add an “off” flavor that arrowroot doesn’t have.
